Traditional Pasta Art: Natural Drying with Respect to Tradition
Apart from the recipes, we try to stay as faithful as possible to tradition. So we use fan-assisted chambers and set medium drying temperatures (up to 39°C) for 18 hours, simulating the traditional way of drying outdoors in the sun. In this way, all the organoleptic and nutritional properties of the wheat are preserved until the end of the production process, making the pasta tastier and more digestible.
